Confession: cauliflower is my new favorite vegetable! Why? Well, beside the fact that it’s tasty, cheap, and easy to find any time of the year, it’s SUPER versatile! You can do a ton of different things with it and I happen to dig that. One of my favorite ways to prepare it is to roast it and then mash it and use it like mashed potatoes but without the starch guilt. But you can saute it, steam it, or throw it on the grill.
So, here’s how I do the cauliflower roasting…
Once you’re ready to chop, pull the leaves off and cut the core out. Then you go for cutting it into little ‘trees’ as I like to call them…
Next, be sure to throw in some garlic for the roasting…garlic makes everything better (except your breath!).
Sooo…now you’re gonna pull out some foil and line a baking sheet with it. I like to use enough to make a cozy little bag for my veggies to snuggle up in. Drizzle it with olive oil, coconut oil, bacon fat, or whatever your fat of choice is. Now throw in the garlic and season with garlic salt, pepper, and whatever else you love. I like to use fresh herbs if I have some on hand, or even paprika and cayenne pepper if I’m feeling spicy.
And then toss it all into the oven at 375. Check your little trees now and then to be sure they’re doing well…give them a toss and see how it’s going. They like that.
When all is said and done, here’s what you’ll have:
Serve it as is, mash it up coarsely and top with meat and sauce, or whatever strikes your fancy! Enjoy!!!
