We opened our second bottle of Dancing Stallion wine – a 2005 Syrah and really liked it! http://dancingstallion.com/. We both agreed that this Syrah tasted like a Syrah should…aromas of coffee, chocolate, some berry/cherry, earth and leather. When you take a sip, the wine is smooth in the mouth with a nice finish. Just a really nice wine that you could drink on its own or with food. One note, we opened this bottle a day before drinking it, which helped with the smooth characters. When we first opened it it was a lot more bright fruit and tannins.
Family owned and operated, Dancing Stallion has over 120 acres of vineyards planted in the Paso Robles Pleasant Valley Trail area.
