Not sure if you’ve ever had one of those food experiences that makes you stop what you’re doing, grab the person next to you, and say “OMG”!!! You know, when time stops, the skies open, your plate and your glass start singing and you hear the food speak to you! If you haven’t had this kind of epiphany, give us a shout and we’ll help you out.
The facts: DCS Catering is new to the Paso Robles food catering scene in the sense that the driving forces have not officially called themselves catering partners until now. Dustin DesJardins and Arlis Borden have worked in the food and wine industry before, and even worked together before; but now they’re coming together en force! They’re putting their skills to work and producing an excellent product; great food!
We got invited to an insane food and wine journey hosted by DCS at Castoro Cellars, where Dustin and Arlis toured us through some of their most creative and adventurous dishes! We had things like Asparagus and Brie Soup, Potato Leek Soup with Chive Oil and Bacon, Beet Salad with Pine Nuts, Goat Cheese and Fuzzy Navel Vinegar, Pork Loin with Bloomsdale Spinach, Bacon, and Carmelized Apples. Among several featured local ingredients were Chaparral Gardens Vinegars, which they did an awesome job of blowing up in flavor and intensity!
Okay, stop drooling long enough to let us tell you what their story is and how they got all up into food! Their goal is….no, wait, watch the video and they’ll tell you what their purpose is!
P.S. There was a little bit of colorful and creative language in the interview…just sayin!

Man…can my kid cook or what? Dustin has had that passion for years, but he continues to amaze me! Now that he and Arlis have formed a team, it’s hard telling how far they will go.
