The title for this cooking night at Refugio was actually, “Two Girls, Two Grills, and Two Paellas”. The two girls were Ali Rush Carscaden from 15C Wine Shop in Templeton and Brigit Binns from…you guessed it, Refugio Kitchen!
This was our second time to Refugio and it actually stemmed from a paella conversation we had at our first class titled “Unique Tapas & Spanish Wines“. Paella night started with a glass of bubbles on the patio, which is always beautiful. Once we moved inside we were greeted with beautiful charcuterie platters and a wee bit more bubbles. You can see photos from the evening in the slideshow below.
When it comes to the paella, Ali did a more traditional one while Brigit made a Catalan noodle paella. More on the specifics of those below. It was such a blast watching Ali and Brigit go head to head outside on the patio with ingredients, grills, utensils, paella pans, and wine. These classes are great for learning new things and having fun while doing it.
Ali’s Paella had chicken, shrimp, onion, garlic, tomatoes, and peppers, finished off with bomba rice. Clams went in at the end, along with a garnish of peas, sliced lemon, and herbs.
Brigit’s Paella had fideo, shrimp, garlic, smoked paprika, soft chorizo, shallots, simmered in a broth of shellfish, chicken, seafood, tomatoes, and herbs.
The wines were all amazing in their own right. We had all Spanish wine, including a Muga Rose, Rioja, and Garnacha, among others. It was a great night of education, great food, laughter and delicious, interesting wines.
