Celebrate National Grilled Cheese Day with us on Thursday, April 12
Sophie, owner of Fromagerie Sophie, in San Luis Obispo took inspiration from Julia and Jacques Cooking at Home cookbook by Julia Child and Jacques Pépin to create an ooey-gooey sandwich that is daringly delectable.
Sophie selected Beaufort, an unpasteurized cow cheese in a traditional rennet style that is aged 12 months. It’s from the Rhône Alps in eastern France. The cheese is fairly dense with a concentrated, buttery consistency, a fruity aroma, and rich, nutty flavors with a hint of sweetness. The paste is creamy, off-white to yellow and very smooth.
She slathered the bread with Les Delices du Luberon Aioli Garlic Mayonnaise. It is from a family brand based in Provence that is based on using fresh produce with no additives, colorings, or preservatives. These products are made from start to finish in the south of France with products that are all certified for their artisanal qualities.
Sophie layered with caramelized onions and watercress for extra taste and texture. Grill and enjoy!
The cheese and mayonnaise are available locally at Fromagerie Sophie in downtown San Luis Obispo. The European-inspired cheese shop has a fabulous selection from all over the world, as well as artisanal charcuterie, pâtés, and specialty accoutrement. There are typically 60-80 cheeses in the case at any time, made according to old world traditions. Fromagerie Sophie is located at 1129 Garden Street.
