Yup, I said it. Tacos are arguably the perfect food on the planet. Sure, there are plenty of other amazing foods, but what better than meat, cheese, salsa, whatever, all perfectly nestled in a delightful vehicle of charred corn? We eat tacos at our house multiple times a week. We’ll grill up a bunch of meat, cut it up and make tacos out of it for the next few days. We also have breakfast tacos sometimes; scrambled eggs, cheese, salsa, bacon, all the things on top. One of my favorite things about tacos is how flexible and personal they are. Each person has their own idea of what makes up the perfect taco. It’s almost a spiritual experience.


I like to buy the street taco sized corn tortillas and keep them in the fridge for quick access. Just throw a couple over the gas stove fire and warm them up until the edges are slightly charred. There’s something about “activating” the tortilla that only works over fire or high heat. It makes all the difference for flour or corn tortillas, plus, it smells amazing. Then you just throw in your protein and your decorations and enjoy! Yes, it really is just that easy.


Proteins:
- Beef, pork, chicken, lamb, elk, antelope, shrimp, crab, fish, scallops, eggs, sausage, bacon, or any other protein that you love. Or skip the protein all together and do a blend of grilled veggies!
Toppings:
- Cheese (any kind), sour cream, avocado, potato, cabbage, lettuce, tomato, pickled onion, radish, salsa, hot sauce, jalapenos, pretty much anything
