Who doesn’t love them some Chicken Stir Fry? Well, here’s an amazingly low calorie, virtually no fat version that is served over Cauliflower Fried Rice. This dish is packed with veggies and lean protein and will leave you feeling satisfied and your body will thank you.
What you’ll need
Stir Fry:
1 pkg boneless, skinless chicken breasts, cut into small chunks
1 head of broccoli (or a bag of florets to save you time), cut into small trees
2 red/orange/yellow bell peppers (I’m not a fan of the green – too bitter), cut into small strips
1/2 onion, chopped
1/2 bag broccoli slaw (keepin it easy and real)
1/2 bunch cilantro, chopped
Chicken marinade:
3 cloves chopped garlic, chopped fine
4 T ginger, chopped fine
1/2 cup soy sauce
2 T sambal chili sauce
4 T fish sauce
4 T white wine vinegar
Cauliflower Fried Rice:
1 bag of riced cauliflower
1/2 bag frozen peas and carrots
1/4 onion, chopped
What to do:
Put the chicken chunks in a large ziploc bag and add all the marinade ingredients. Smoosh it all around and throw it in the fridge. This can marinate for up to 24 hours. I recommend you let it go for at least 4 hours. Meanwhile, let’s make the Cauliflower Fried Rice, shall we?
Throw a little bit of olive oil in a sauté pan and let it get nice and hot. Put your chopped onion in and let it brown a bit. Now add your riced cauliflower and let it go for a bit. You may need to add a little bit of water. I always buy it in bulk and throw it in the freezer so the moisture from being frozen covers me. Once it starts to soften a bit, add the peas and carrots. Season with a bit of garlic salt and drizzle some soy sauce. Taste it. Good? Great! No? Season a bit more. Repeat.
Time for the Stir Fry. Heat a large sauté pan very hot and add a little olive oil. When it’s good and hot, add your chicken. Let it rock and roll in there until almost all the way cooked. Remove and set aside. Put the broccoli in the pan and let it cook. Once it turns bright green, add your onion and peppers. Let those soften slightly, then add the slaw. Once done, add the chopped cilantro. Now, again with the seasoning routine; garlic salt, soy saucy, taste, repeat until irresistibly delicious!
Serve over the Cauliflower Fried Rice. Yay, you!!!
